Mixed Bean Chili

  • 1 onion, diced
  • 1 tbsp olive oil
  • 1 green pepper, chopped
  • 1 tbsp tomato paste
  • 1 14 oz. can chopped tomatoes
  • 1 can black beans, drain no salt added
  • 1 can red beans, drain no salt added
  • 1 can pinto beans, drain no salt added
  • 3/4 cup halved baby corn cobs
  • 1 cup cubed potatoes
  • 2/3 cup vegetable broth
  • 2 garlic cloves, minced
  • dash or more of red pepper for a little heat
  • 1 teaspoon chili powder
  • 1 tsp cumin
  • 1 tsp honey
  • Kosher salt and freshly ground black pepper to taste

Saute onion in olive oil 10 minutes

Add the rest of ingredients, bring to boil, simmer 1-3 hours
